In cakes, cookies and quick breads however, reducing sugar without reducing quality takes a bit more thought. The great news is that while each recipe and sugar substitute is different, over the years I have found that with some modifications - a little bit of kitchen chemistry, if you will - low sugar baked goods look and taste just as delicious as their full sugar counterparts.

Got a sweet tooth but need to watch your sugar intake? You’re not alone! In this week’s American Diabetes Wholesale Newsletter, Registered Dietician Marlene Koch gives us some healthy options for baking with less sugar and sugar substitutes.

“In recipes where sugar’s primary role is simply to sweeten, such as a cheesecake or mousse, swapping out most, or even all of the sugar, with a sugar substitute is not usually a problem… make sure that the amount of sugar substitute you use is equal to the amount of sweetness provided by the sugar called for in the recipe…”

Marlene goes on to give some great tips and tricks for reducing the amount of sugar while baking and how to better utilize sugar substitutes so you can hit that “sweet spot” between sugar reduction and great taste. Marlene has proven to us that you can “have your cake and eat it too!”

The bottom line is that we need to be most concerned with how much fat, sugar, processed/refined carbohydrates, and salt we consume daily...
... Many processed and prepared foods can be hiding very high amounts of one or all of these.

With fat, sugar, and salt being the news these days as the focus of many folks looking to maintain a healthy lifestyle, this week’s American Diabetes Wholesale Newsletter is most timely. In it, Marci Sloane, our resident diabetes educator, enlightens us with some eye-opening facts regarding consumption of these nutrients as well as some great tips for us to keep in mind when managing our daily intake.

“Many processed and prepared foods can be hiding very high amounts of one or all of these. Your body needs these nutrients for energy, but moderation and healthy choices allow you to take the best care of your body.”

“Fat is fattening. There are 9 calories for each gram of fat (carbohydrates and protein have only 4 calories per gram).”

“Sugar doesn’t have many calories: just 4 calories per gram. The problem is that it is lacking nutritional value and whatever isn’t used as energy gets stored as fat.”

“1 tsp of salt has 2,300 mg of sodium. Total amount recommended for the day is 1,500 mg of sodium.”

There’s truly some timely information here; paying heed to it could have a tremendous long-term impact on your health.

So it seems a bit ironic that bread is often listed as one of the first foods to go when one is looking to limit carbohydrates. The reality is that one ounce of plain bread averages just 80 calories and 15 grams of carbohydrate, and is a valuable source of energy for any diet. The problem is that variations in size, density and ingredients can vastly alter the nutrient content of the bread we choose, converting a simple healthy whole grain piece of bread into a budget busting nightmare...

This week’s newsletter features Marlene Koch giving us a primer (with video!) on making healthy choices when it comes to our daily bread. Often referred to as the “staff of life,” bread has been a staple and a main part of the average diet for centuries.

In modern times there has been a movement toward reducing (or eliminating entirely) this staple from the daily diet, many times in an effort to reduce carbohydrate intake. However, Marlene shows us the way to healthy management of bread in our diets by pointing out that not only is bread a valuable source of energy, but that there are many more options for the the portion- and calorie-conscious persons these days. We’re sure you will enjoy Marlene’s video and primer on some of today’s best bread bets.

This week Marlene Koch is back with a very timely article for these tough financial times titled “10 Ways to Eat Well on Budget.” As many of us are trying to cut extra spending, one of the biggest expenses happens to be food. As you probably know, there is a temptation to save by eating plentiful yet starchy foods such as pasta and rice or cheap yet filling fast food. This poses a challenge to consuming a balanced nutrition every day, especially for those with diabetes. Marlene presents some great tips on how to continue to eat right…and spend right too!

Marlene also offers one of her great and healthy recipes by putting a new spin on an old homemade staple with Tuna Noodle Casserole. Make this old favorite better for you by using low-fat soup and cheese and partially substituting the amount of pasta with artichokes. It sounds like a great way to feed the family (and have enough for penny-saving leftovers) and cut the carbs and fat on this classic American dish.
